Chewy Coconut Flour Cookies
Chewy and delicious using healthy and low carb coconut flour. Use the basic dough recipe and add chocolate chips, nuts or dried fruit bits. This will become your "go-to" cookie dough.
Servings: 10 cookies
Ingredients
- 5 Tbsp butter
- 1 Tbsp cream cheese
- 2 Tbsp heavy whipping cream
- ½ cup sugar substitute
- 1 pkg gelatin
- 1 large egg
- 1 tsp vanilla
- 1 tsp baking powder
- ⅜ cup coconut flour
- ½ cup chips, nuts or fruit bits
Instructions
- Preheat oven to 350 degrees and line baking sheet with parchment paper.
- Cream together butter, cream cheese, whipping cream, egg, sugar and vanilla until light and fluffy.
- Add gelatin, baking powder and coconut flour and blend until smooth.
- Stir in nuts, chips and/or fruit until blended.
- Spoon on to baking sheet and press flat. (Cookies will not spread during baking). Bake for 17 minutes or until lightly browned.
- Allow to cool for 20 minutes before removing from baking sheet.
